Peach Caprese Crostini Salad with Buratta

I love the flavors of spring and summer. Winter is a time where we eat warm, comforting food, and I love transitioning into those fresh, healthy flavors! This beautiful salad is one of my absolute favorites to make for lunch or as a dinner side dish. It combines some of my favorite foods onto one delicious plate! 

Here's what you'll need (4 servings):

Salad:

  • 2 peaches
  • 1 lb heirloom tomatoes, any variety
  • 1/3 cup fresh basil, chopped
  • 2 tbsp fresh oregano, chopped
  • 1 tbsp elephant garlic, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1 tsp salt

Base:

  • 4 buratta balls
  • 1 sourdough baguette
  • 1/2 cup butter
  • 1 tbsp elephant garlic, chopped 
  • pinch of salt

How to make it:

  1. Chop or slice peaches and tomatoes to your preferred sizes. Place in a medium bowl with the rest of the salad ingredients and toss together. Set aside and let soften for about 10 min.
  2. Heat panini grill to manufacturer's suggestion; I set mine to 300 degrees.
  3. Mix room temp. butter with garlic and a pinch of salt. Slice the baguette into small pieces and spread each side with garlic butter.
  4. Grill baguette slices on panini grill until they have markings but are still soft on the inside.
  5. Distribute salad onto four plates. Halve a buratta ball onto each plate and add the crostini and tomato/peach mixture, along with a drizzling of sauce from bottom of the bowl for extra taste!
