Baked Salmon in Foil | Easy, Healthy Recipe


Get ready for your mouth to water. Today's recipe is perfect if you need a break from heavy foods and crave something on the healthier side. I'm going to be sharing how to make a delicious lemon and herb salmon in foil with fresh bruschetta on ciabatta bread on the side!

Bruschetta Ingredients

  • 1 loaf of ciabatta bread (or more, depending on the size of your fam!)
  • 1/2 cup olive oil
  • Kosher salt
  • 5 ripe tomatoes
  • 5-8 basil leaves
  • 2 garlic cloves

The Bruschetta

  1. Preheat oven to 375 degrees.
  2. The best bread to use for EVERYTHING is ciabatta bread. Slice a loaf in long pieces.
  3. Take 1/2 cup of olive oil and use pastry brush to lightly coat the bread. Add Kosher salt as needed.
  4. Toast in oven for a little less than 10 minutes or as desired. 
  5. Dice 5 RIPE, juicy tomatoes. 
  6. Add 5-8 minced basil leaves and 2 garlic cloves smashed and diced. Mix well. Add lots of salt for taste. 
  7. Place bruschetta atop toasted ciabatta bread and ENJOY!

Herb & Lemon Salmon Ingredients

  • Pam spray
  • Fresh herbs (I use rosemary, thyme, parsley and sage)
  • A few lemons
  • 3 minced garlic cloves
  • Room-temp salmon
  • Kosher salt & pepper

The Herb & Lemon Salmon

  1. Preheat oven to 375 degrees.
  2. Cut a large, wide piece of tinfoil and spray with Pam. 
  3. Place a layer of sliced lemons onto tinfoil and sprinkle herbs of choice on top 
  4. Sprinkle 3 minced garlic cloves onto lemons
  5. Place room-temp salmon on top 
  6. Squeeze 1 fresh lemon over salmon
  7. Sprinkle Kosher salt and pepper as needed
  8. Close tinfoil and seal tight, while leaving some breathing room above the salmon 
  9. Place salmon in oven. Take out after 12 minutes, leave salmon on top of oven as you wait for oven to set to BROIL. 
  10. Open tin foil. Place back in oven and broil until salmon is lightly brown.
