Grandma Helen's famous Potato Latkes
Jill’s Potato Latkes, in memory of Grandma Helen
Though many only cook this once a year, my Grandma Helen made it EVERY SUNDAY I came to visit till she was 102! I begged her for the recipe. It almost seems to simple but here you go! Good luck...they may fall apart the first time...but make sure you use a high heat Oil like Corn Oil ( never OLIVE OIL FOR FRYING!) Practice makes perfect!
Ingredients:
-matzah meal
-1 egg
-6 white potatoes
-1 teaspoon of salt
-vegetable oil (don't use any OLIVE OIL! can use Corn)
-1 onion, if desired
Directions:
1. Peel 6 white potatoes, cut them in half and boil them in water until soft. Put cooked potatoes in a bowl.
2. Add one egg, one grated onion if desired, and 1 tablespoon from the "dirty" water you boiled the potatoes in. ( you can use clean water too). Add salt. Mix together so it is lumpy.
Roll into a medium ball then flatten to about one inch high. Roll in Matzah Meal and then fry in MEDIUM HEAT with 1/4 inch of oil. Make sure oil is hot before putting them in. About 5 minutes on each side ( until crispy brown) . Remove and let sit on PAPER TOWELS to soak out extra oil. Salt for taste.
Have some apple sauce on the side and ENJOY!!!
